Green beans, also known as string beans or snap beans, are the quintessential crunchy garden vegetable. Known for their vibrant color and fresh, grassy sweetness, they offer a satisfying “snap” when broken. Green beans originated in Central and South America, specifically in the regions of Peru and Mexico, where they have been cultivated for over 7,000 years. They were a vital part of the diet for indigenous populations alongside corn and squash. Spanish and Portuguese explorers introduced them to Europe in the 16th century. Interestingly, the “string” that used to run down the seam of the bean was largely bred out by botanists in the late 19th century, leading to the modern “stringless” varieties we enjoy today.
Green beans are a highlight of the Summer garden. They love warm soil and plenty of sunshine, with peak harvest typically running from July through September. Because they grow rapidly once the weather warms up, they are often harvested every few days to ensure the pods remain tender and don’t become tough or “beady.”
